Fresh Basil Pesto

Basil Pesto Ingredients

100g Pine nuts

2 x garlic cloves

30g fresh basil

75g Parmesan cheese

Cotswold Gold extra virgin cold pressed rapeseed oil

Salt and pepper

(there are no set rules so these quantities are just a guideline, all ingredients can be adjusted to taste)


Lightly toast the pine nuts in a dry frying pan until golden. Peel the garlic cloves & grate the cheese. Blend the pine nuts, garlic, fresh basil and grated Parmesan with a blender (we use a Magimix) adding the oil slowly as you blend until you reach the desired consistency. Season with salt and pepper to taste.

Serving Suggestions:

Pasta Sauce – This Fresh Basil Pesto is delicious with fresh pasta – try mixing the pesto with a little cream fraiche to make a creamy sauce and add in chopped roasted cherry tomatoes, fresh rocket or spinach and some crispy bacon for extra flavour – sprinkle with grated Parmesan to serve.

Dips or Sandwiches – Stir your pesto into plain Cotswold Gold mayonnaise to make a delicious dip, condiment or sandwich spread to use in place of butter or regular mayonnaise – delicious with roasted vegetables or chicken.

Pesto can be stored in a jam jar with lid in the fridge for a week or two.

Top Tip – Keep your pesto fresh by covering any remaining in the jar with extra oil before storing.
