Cotswold Gold Avocado Chicken Salad Wrap

Servings – Makes 4 wraps

Avocado Chicken Salad Wrap Ingredients

2 x cooked chicken breasts – preferably marinaded and grilled in Lemon & Balsamic Drizzle
2 x ripe avocados
4 x tortilla wraps
Fresh rocket
Salt & pepper to taste

Instructions

1) Peel and de-stone the avocados and mash with a fork in a mixing bowl

2) Shred the chicken and add to the bowl along with a large tablespoon of the mayonnaise

3) Mix altogether and season to taste

4) Meanwhile lightly toast the tortillas under a grill

5) Spoon the avocado and chicken filling onto the warmed tortilla, add the rocket, wrap and enjoy!

 

Serving Suggestions

An ideal quick lunch especially if you have left-over chicken to use up!
The avocado and chicken can also just be served alongside a fresh salad for a gluten free option.
