Cotswolds Mince Pie White Russian

Here is our take on a classic White Russian. We have swapped the traditional vodka for Cotswolds Distillery Signature Single Malt, to bring in some extra Christmassy flavours. The drink is lifted with a Mince Pie syrup, to go full on Christmas and served with mince pies and our Cotswolds Whisky Butter.

Serves 1

Ingredients

  • 50ml Cotswolds Single Malt Whisky (you could also use spiced rum, bourbon or vodka)
  • 25ml Coffee Liqueur
  • 20ml Mince Pie Syrup (see below)
  • 50ml Double Cream, chilled

Garnish:

Method

  • Spread Whisky Butter around the rim of an old fashioned glass. Then dip into the mince pie pastry crumbs
  • Add whisky, coffee liqueur and mince pie syrup into the glass and stir.
  • Fill with ice
  • Float over the cream or just mix straight in and gently stir
  • Garnish with a dusting of nutmeg and cinnamon (optional)
  • Serve with a mince pie and Whisky Butter on the side.

Mince Pie Syrup Ingredients:

  • 100g sugar, white granulated
  • 100ml water
  • 2 tbsp quality mincemeat (or scoop from mince pies. Saving the pastry for the garnish)

Mince Pie Syrup Method:

  • Combine the sugar, water and mincemeat in a small saucepan.
  • Bring to a simmer over medium heat, stirring until the sugar dissolves.
  • Reduce heat and let it gently simmer for about 10 minutes.
  • Strain the syrup through a fine mesh sieve to remove the solids, and let it cool. Store in a sealed jar or bottle.
