Boxing Day Coleslaw Recipe
A fantastic addition to the Boxing Day dinner table. Bright, seasonal and versatile.
This is super simple and can be prepped a couple of days ahead.
INGREDIENTS
- 1 white onion, peeled and sliced
- 1/2 small red cabbage, sliced (outer leaves and core removed)
- 2 carrots, peeled and grated
- 6 brussels sprouts, finely grated (outer leaves and stalk removed)
- 1 tbsp capers, roughly chopped
- 1 lemon, zest and some juice to taste
- dill, small bunch picked and chopped (reserve some for garnish)
- flat leaf parsley, small bunch leaves and stalks, chopped (reserve some for garnish)
- quality mayonnaise, to your liking – we like ours with quite a bit on. Our favourites are our Original Mayonnaise. Or the Lemon Mayonnaise for a bit of extra zip
- black pepper, to your liking
- salt, to your liking but only added last minute
METHOD
- Prepare the vegetables. You can prepare in advance. Keep the vegetables separate. Ideally in a vacuum or sandwich bag and in the fridge until needed.
- Simply combine all ingredients. Reserving some herbs for garnish
- Mix well with the mayonnaise of choice. Always add more than you think as it will thin out once all combined after a while
- Serve straight away or leave in fridge until needed.
- Garnish with fresh herbs
Fantastic served with Christmas Roast Ham and Roast Potatoes
